Tasting Notes

Non-Vintage Sauvignon Blanc

Our classic styled Non-Vintage Sauvignon Blanc was fermented in stainless steel, french oak as well as concrete vessels of which helps amplify the mineralistic undertones of this wine. This "classic" West Coast style is a blend of 2017 Napa Valley fruit and 2016 Lake County fruit, both located in Northern California. It showcases citrus fruit, lemongrass, tropical notes along with a big mouthfeel offered to us from the oak and concrete aging regime.

The wine's fermentation in concrete also allows for a level of natural micro-oxidation that enhances the overall mouthfeel. Layered, yet approachable.

Good to Know

Centuries ago, in some sunny, romantic vineyard in France, Sauvignon Blanc vines met up with Cabernet Franc. The two crossed and it was…well…magic: they created Cabernet Sauvignon. Fumé Blanc is a phrase and style of wine born in California in the 1960s and popularized by Robert Mondavi. Fumé Blanc is Sauvignon Blanc aged in oak, giving it smoky notes (fumé means smoke).
Sauvignon Blanc is the world's 8th most planted wine grape.

Why does this type of wine smell so much like passion fruit or mango? During fermentation, thiols are created. These natural, volatile sulphur-compounds are responsible for all the fruity aromas.
